BBL Bars: Home made trail mix bars



I absolutely love KIND bars, but I don’t love paying $2.00 for an energy bar (or hunting down where the bars are on sale each week like the crazed hungry runner I am!).

So, I’ve been on the hunt for a trail mix bar recipe that is healthy, simple and great for an on-the-go snack. Guess what! I’ve found it in BBL bars- short for Bikini Baking Lady bars.

These BBL bars are made of four ingredients and take less than 5 minutes of prep time. Simply perfect.

1 C cashews (or salt-free mixed nuts)

1/2 t  sea salt (or less)

3/4 C dates, prunes or figs

1 t pure vanilla extract

*unsweetened coconut flakes for added crunch


What you’ll need:
Food processer

Tupperware that can go in freezer

Wax paper



Place cashew in food processor and pulse until nuts resemble graham cracker crumb (finely pureed).

Sprinkle in the salt. Next add the dates (or prunes or figs) to the mixture and continue to puree. Add in the vanilla extract.

The mixture will begin to clump together with the released moisture from the dates and vanilla extract (see image below)


Place a piece of wax paper inside a small Tupperware. Use a spatula to move mixture into the Tupperware. Using the palm of your hands push down very hard on the mixture, especially the sides of the mixture. Sprinkle with coconut flakes if you want some added crunch!

Place in the freezer for about 30 minutes. Remove from freezer, cut into bars and then individually wrap bars and place back in freezer.

This snack is served cold to ensure that the bar does not crumble.
